FROZEN STRAWBERRY POPS

 

Why wait for summer! These strawberry pops are fun anytime of the year. Make in ice cube trays or individual small plastic cups. BTW the recipe calls for 1/2 cup confectioners sugar, but the sweeter your berries, the less sugar you can use. Try growing the Quinault variety strawberry. Yum!

 

You’ll need:

  • 1-1/2 pints strawberries, rinsed and hulled
  • 1/2 cup confectioners’ sugar

 

In a food processor, pulse strawberries with sugar and 1/3 cup water until pureed, with some chunks of berries remaining. Pour half of mixture into a bowl. Pulse remainder until smooth. Combine both purees into a bowl. Pour into 3-ounce molds or plastic cups, insert sticks or wooden spoons, and freeze until solid, at least

8 hours.
