Fruit and Veggie Sushi Bites

 

Also known as “Frushi” (Fruit-Sushi), this Asian-inspired idea is so much fun to eat they’ll forget it’s healthy. Many of the recipes we’ve found use only fruit, but we think veggies are great tasting, too – plus it expands the number of ingredients you can grow. Make in advance and chill. Easy for after school, pretty enough for parties. If your kids gravitate to sweets (and whose don’t?) serve with a yogurt, honey or jelly dipping sauce.

 

You’ll need:

  • 1 cup Sushi Rice
  • 1/4 cup Coconut Milk
  • Salt
  • 1/4 cup Sugar
  • Your choice of fruit & veggies: apples, carrots, pears, blueberries, cherry tomatoes, broccoli, peppers, melon, orange slices, strawberries, etc.

 

In a medium saucepan bring the water and rice to a boil. Cover, reduce heat, and simmer 15 minutes or until water is almost absorbed. Remove from heat and let stand covered for 15 minutes.

 

Place rice in a large bowl. Add the sugar, coconut milk, and salt, mixing gently until well combined. Cover and let stand another 20 minutes.

 

Lightly coat hands with cooking spray. Divide rice mixture into 20 equal portions about 1 rounded tablespoon each. Lightly press each rice portion into a mini- football, and place on a baking sheet lined with wax paper.

 

Place your choice of fresh sliced fruit or veggie on each. Cover and chill until ready to serve. Option: Serve a dip of yogurt, honey or even melted jelly.
