Rainbow Pita Pizza

 

Fun, fast, simple, healthy, low calorie and tasty — and your kids can make it themselves! What more could any parent ask? One secret is to have a variety of veggies already cut up and kept in Tupperware in the fridge, That way they can just open up a pita pocket and arrange the colors anyway they want, Sprinkle with a little cheese, or a lot –– it’s all good!

 

You’ll need:

  • Large Pita breads 4 tablespoon pesto
  • Fresh broccoli pieces
  • Green bell pepper, diced
  • Red-Purple onions, diced
  • Yellow squash, sliced
  • Orange bell pepper, diced
  • Halved cherry tomatoes
  • 1 tablespoon extra-virgin olive oil, plus more for drizzling
  • 1 pinch coarse salt and freshly ground pepper

 

Preheat oven to 400°F.

 

Slice open each pita bread into flat halves, and spoon pesto over each half. Arrange the vegetables in bands of color. Season lightly with salt and pepper.

Garnish with a little mozzarella, feta, ricotta or parmesan cheese if desired.

Place in oven (or toaster oven) and bake 20 minutes, until the veggies have softened and the tomatoes wilted. (Swap veggies as desired – purple potatoes are good, but need a little advance roasting.)
