Vegetable Roll Ups

 

For lunch or afterschool snack these tortillas are loaded with crunch and flavor and veggies! Make them overstuffed (as shown) or reduce the amount of veggies and roll them into tight tubes that are easy to bite mess-free. This is just an example – you can swap different flavored tortillas and veggies however you like.

 

You’ll need:

  • Large (9 or 10” inch) flour tortillas
  • Romaine or green leaf lettuce
  • Italian dressing
  • Hummus (store-bought or homemade)
  • 1/2 cup zucchini, cut into julienne strips
  • 3 carrots, peeled and cut into julienne strips
  • 1 red pepper, cut into julienne strips
  • 1 small red onion, peeled and thinly sliced
  • Salt and freshly ground pepper

Spread some hummus and dressing over the face of a tortilla.

 

Arrange enough veggies and small pieces of lettuce to cover three quarters of a tortilla. (For an overstuffed roll-up, add more; for a thinner roll-up, add less).

 

Arrange the veggies vertically so when you roll, the ends stick out from the top and bottom. Press down gently to get the veggies to stick to the hummus/dressing. Sprinkle with salt and pepper.

 

Roll the tortilla (starting with the side opposite the unstuffed side) trying to keep the roll as tight as possible. If it falls apart, unroll, remove some excess veggies and try again. With just a couple of tries, you will master the right amount of hummus/dressing/filling to create a perfect roll-up.

 

Place the wrap, seam side down, on a cutting board. Using a sharp knife cut the wrap in half on the diagonal, or into several bite-sized pieces.
