Cool Season Veggies: Plant Now for a Delicious Early Harvest
Cool season veggies are the first true sign that gardening season has finally arrived. These hardy crops don’t just tolerate chilly weather—they love it. Broccoli, lettuce, Swiss chard, spinach, kale, cabbage, and many more cool-loving varieties are ready to plant now, long before the heat of summer.
Because cool season veggies thrive in early spring’s cold soil temperatures, they’re perfect whether you’re a seasoned grower or trying vegetable gardening for the first time. They establish quickly, grow vigorously, and reward you with crisp, flavorful harvests before warm-weather crops even get started.
Keep an eye on the forecast: if nighttime temperatures dip below freezing, simply cover your cool season veggies with an old sheet, frost cloth, or even a cardboard box. Smaller pots can be brought indoors for the night. With just a bit of protection, these plants bounce back beautifully.
